The Salad I Stole from Kupfert & Kim


I mentioned this salad in my chia pudding post. It's the Cauliflower Tahini Bowl that I started ordering from Kupfert & Kim and became obsessed with. In fact, when I was in Italy enjoying mountains of pasta, I was craving this salad from home so badly! 
I get it on a base of kale (or half kale, half mixed greens) and add the hemp and sunflower balls for extra protein. 

It's just one of those things you can eat that makes you so wonderfully satisfied knowing how delicious it is and much goodness it contains. It's great to be able to have options like that available when you want to order takeout, or to try and copy at home. 

Here's my take on Kupfert & Kim's cauliflower tahini bowl. 

- Kale massaged with some olive oil and a touch of himalayan salt as a base. 

- Tahini dressing - I use this a variation of this recipe from Minimalist Baker. 

- A couple spoonfuls of a chopped salad made with tomato, cucumber, red onion, and parsley (optional). I cut large chunks of one tomato, half of a cucumber, half a red onion, and a handful of parsley and throw into the food processor for a few seconds on the chop setting. 

- Grated carrot

- Spiralized or grated beets

- Three hemp balls - I use something similar to this recipe, the garlic and herb flavour. You can also buy Kupfert & Kim's own hemp and sunflower balls from their grocery section by ordering on Ubereats!

- A couple of Mary's Crackers (they end up being sort of like croutons).*

- Roasted cauliflower. Out of convenience I usually just use PC Organics frozen cauliflower. I toss it in a bowl with a little bit of olive oil, tamari sauce, garlic powder, and zata'ar seasoning and then roast it at a high temperature or even broil it if I'm low on time. But you do it how you want it. 

- Pickled red onions. These can be bought or made. 

- A scoop of hummus topped with smoked paprika, surrounded by one sliced raddish.

- Some chopped parsley to go on top. 

- A sprinkling of pomegranate seeds. This is not essential and somewhat annoying to do, but it does add a nice touch.

- Some pumpkin seeds on top. In the photo I think I used chia seeds and hemp hearts but this is more what I normally do.

* I noticed in making this post that "Mary's Crackers" has actually been changed to "Mary's Gone Crackers." I'm not sure how I feel about that.

  1. I'm going to make the hemp balls. Have you ever heated them in the oven?

    1. I do sometimes, yes! You have to be careful with the coconut oil because it's the coconut oil cooling in the fridge that helps them to keep their form. I play around with the ingredients though and sometimes use a bit of olive oil rather than coconut oil, and yes I bake them in the oven.
